Hello lazy girls.
This one requires a little bit more prep, only because you have to crack eggs and take stuff out of their wrappers. But it’s really quite tasty.
What you need: (1 portion)
- 1 muffin tin (rubber or metal)
- 1 normal sized egg (not too big)
- 1 tbsp milk
- 1 tbsp tomato-based pasta sauce
- Egg tofu (optional)
- Rosemary (optional)
- 1 strip bacon (piece de resistance)(ok not really)
The reason why I say use a rubber or metal muffin tin is because I used a paper one which doesn’t hold well… thus they came out super ugly. If you are too lazy to wash your tins, go ahead and use paper ones but they make them slightly less instagrammable. If you’re using paper ones remember to spray them with oil too!
First you roll bacon to line the muffin tin. I also used egg tofu as a base because they were left over from another lazy girl recipe. Points for being innovative pls.
Next, crack your egg inside.
Then add 1 tbsp of milk and 1 tbsp of tomato based pasta sauce (had these in the fridge already).
Garnish with rosemary if you like, and then pop into the airfryer for about 8-10 min (depending on how well you like your eggs done). I did about 8 min.
I loike. The egg wasn’t too runny, and the pasta sauce + bacon added a punch to the very breakfasty dish. I don’t think the egg tofu did much to value add.
Some people use bread as a base! Can try that too.
