Aaaand here’s another episode of lazy air frying!
Prep time: 10 min (can be cut down)
Bake time: 15-20 min
I have added 2 new tools to the stash… a tiny non stick baking tray (so I can save on aluminium foil) and also a julienne peeler (so I can act zucchini noodles).
What you need (1 portion):
1. A handful of cherry tomatoes
2. Half a zucchini
3. Chicken thigh (defrosted if it was frozen)
4. Drizzle of olive oil / coconut oil
5. Garlic salt
6. Sliced mushrooms (optional) (can get these ready-sliced from NTUC!)
Trying to be fancy actually eats into the time. So if you’re really too lazy you can lose the julienning and just chop the zucchini up. Toss in olive or coconut oil and sprinkle garlic salt over!
You can also skip chopping the cherry tomatoes into half. I usually just throw the zucchs in thick chunks and cherry tomatoes whole. As mentioned, I bought the mushrooms ready sliced so no work there! Actually put the mushrooms below the chicken so they don’t dry up while baking.
Voila, after 15 minutes in the airfryer. Depending on the size / thickness of your chicken thigh, you might have to put it in for 5 more minutes or so so that it’s thoroughly cooked.
